  • Preheat oven to 160C fan-forced.
  • Combine dry ingredients in bowl.
  • Beat oil and sugar until combined on medium speed of mixer. Beat in egg, mashed potato and essence until just combined. Alternatively mix in (by hand) dry ingredients and buttermilk, beginning and ending with dry.
  • Fold in drained blueberries and spoon into paper cases until ¾ full.
  • Bake 20-25 minutes.



  • 1½ cups self-raising flour
  • 1½ teaspoons baking powder
  • ½ teaspoon bicarbonate of soda
  • ½ teaspoon salt
  • ¾ cup Mawana caster sugar
  • ¼ cup canola refined oil
  • ½ cup buttermilk
  • 1 egg
  • ½ teaspoon coconut or vanilla essence
  • ¾ cup cold mashed potato
  • 1 x 415 g tin blueberries, drained
